I’m a creature of habit in the morning, and when I find a breakfast that keeps me full, tastes good, and doesn’t require a culinary degree, I stick with it.

Here are the breakfasts I make on repeat. These are quick, easy, and delicious. Maybe you will love one, too!

1. My High‑Protein Egg Pancake

This one is filling and ridiculously simple.

Ingredients

  • 2 eggs

  • 2 servings of egg whites

  • ¼ cup cottage cheese

  • Shredded parmesan or cheddar

  • Salt & pepper, to taste

  • Slice of bread or a tortilla

How I Make It

Crack the eggs into a blender, add the egg whites and cottage cheese, and blend until smooth.

Pour the mixture into a skillet and cook it like a pancake. When the eggs are almost set and ready to flip, add your cheese on top (and any other toppings you want, such as spinach. Yum!

Flip carefully, turn the heat to low, and let it finish cooking for a few minutes.

Slide it onto your plate and eat it like a pancake with a slice of buttered or jellied bread. It’s delicious, filling, and honestly just hits every time.

2. My Easy Greek Yogurt Protein Bowl

This one takes two minutes and tastes like a dessert if you mix it right.

Ingredients

  • Plain or vanilla Greek yogurt

  • Chia seeds

  • Peanut butter

  • Peanut butter protein powder

I recommend Promix Grass‑Fed Whey Protein. The flavor is smooth (not chalky), and one 40‑gram scoop gives you 25 grams of protein. They use minimally filtered whey concentrate, no artificial ingredients, and run independent lab testing on all products.

How I Make It

Mix everything together, pop it in the fridge for 30 minutes, and enjoy. It thickens up into a pudding‑like texture that’s perfect for busy mornings.

3. Sourdough Waffles (Weekend Favorite)

If you have a sourdough starter, Little Spoon Farm has an amazing sourdough waffle (or pancake) recipe. It’s simple, reliable, and tastes like something you’d get at a cozy brunch spot.

These three recipes are on repeat in my household - easy, nutritious, and filling. And did I mention delicious?! Maybe one will become your favorite, too!
